Cucumber Salad with Sweet Onions and Spices

  • 1 large cucumber , sliced thinly into rounds
  • 1/2 a large sweet onion , sliced thinly
  • 1/2 cup apple cider vinegar
  • 11/2 tbsp sugar
  • 1/2 tsp black peppercorns
  • 1/2 tsp coriander seeds
  • 2 allspice seeds
  • 1/2 tsp salt


  1. Place cucumber and onion in a medium bowl.
  2. Heat apple cider vinegar in a small saucepan with sugar, peppercorns, coriander, allspice and salt. Bring to a boil and stir to dissolve sugar.
  3. When dissolved, pour over cucumber and onions.
  4. Press down to submerge vegetables then place a lid on the bowl.
  5. Let sit for at least 1/2 hour or place in the refrigerator overnight then serve.
