Herbed Kohlrabi Soup

Ingredients

  • 1/2 of a large kohlrabi , cubed
  • 1 large potato , cubed
  • 1 medium carrot , diced
  • 2 cloves of garlic , sliced
  • 1 L of vegetable stock
  • bunch of parsley , shredded
  • bunch of dill , shredded
  • 2 tsp winter savory
  • pinch of cayenne
  • salt and pepper

Instructions

  1. Sauté kohlrabi, potato, carrot and garlic for several minutes. Add the stock, bring to boil, decrease the heat and cook for 10 minutes.
  2. Add the herbs and spices and cook on a small heat until kohlrabi is very soft. Blend the soup.
  3. Garnish with olive oil or yoghurt and parsley.
