Vibrant Winter Slaw

Author Adapted from "Friday Night Dinners" by Bonnie Stern

Ingredients

  • 1/2 napa cabbage , sliced very thinly
  • 1 large carrot , grated
  • 1 beet or 1 large watermelon radish , sliced into matchsticks
  • 1/4 of a red onion ,
  • minced1/3 cup apple cider vinegar or rice vinegar
  • 2 tbsp sugar
  • 1 tsp ground cumin (preferably toasted before being ground)
  • 1/3 vegetable oil
  • Salt and Pepper to taste

Instructions

  1. Combine cabbage, carrots, beet or radish and onion in a large bowl.
  2. In a small saucepan, combine vinegar, sugar, cumin and oil and bring to a boil.
  3. Add dressing to cabbage and toss.
  4. Season to taste with salt and pepper.

Creamy Coleslaw Dressing

  1. In a small bowl, combine 1 minced garlic clove, 2 tbsp lime juice, 1 tsp ground cumin, 1/2 tsp hot red pepper sauce, 1 tbsp sugar and 1 cup mayonnaise (or half mayo/half plain yogurt).
  2. Taste and adjust seasonings if necessary.
