Edamame, Tomato and Basil Salad

Ingredients

  • 1 cup shelled edamame
  • 1/2 cup tomatoes , chopped
  • 2 tablespoons Parmesan cheese , shredded
  • 1/3 cup fresh basil , chopped
  • 1 tablespoon red wine vinegar
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Combine all ingredient in a bowl. Serve immediately or chill for a couple hours before serving.
  2. Makes about 1 1/2 cups (4 heaping-1/3 cup servings)
