Honey Roasted Squash

  • 1-2 delicata or sweet dumpling (or any other!) squash
  • 3-4 tbsp olive oil
  • 1 tbsp honey
  • 1 tsp cayenne or chipotle pepper flakes
  • (optional)
  • salt and pepper


  1. Cut squash in half vertically and remove seeds, stem and butt end.
  2. Place cut side down on a cutting board and slice into 1/2-3/4 inch slices.
  3. Place slices in a bowl and toss with oil, honey, salt and pepper and cayenne until well coated.
  4. Bake in a 375 degree oven for 35-40 minutes or until well browned.
  5. Toss several times during the baking to ensure even browning and to prevent burning.
