Ingredients
4-5white spring turnips, washed and thinly sliced
4-5radishes, washed and thinly sliced
1/2cupcottage cheese
2-3tbspextra virgin olive oil
2-3tbsplemon juice
dash of balsamic vinegar
salt and pepper to taste
Instructions
Combine turnip, radish, cottage cheese and remaining ingredients in a bowl. Toss to combine thoroughly.

***Optional: Serve over a bed of arugula drizzled with olive oil, balsamic and a squeeze of lemon - so good! ***Substitution: try kohlrabi, chopped broccoli, fennel or other mustard greens in place of the turnip or radish.
