Kohlrabi Salad with Green Onions, Cilantro and Greens

Servings 4 -6

  • 1 lbs kohlrabi
  • about 1/2 cup fresh cilantro , chopped (or parlsey)
  • 6 green onions , white and firm greens, thinly sliced
  • 3 kale leaves , stems removed and very thinly sliced
  • Sea salt
  • 3 tbsp olive oil
  • 4 tsp lemon juice or rice vinegar


  1. Peel the kohlrabi and cut into a fine julienne (matchsticks). Toss the kohlrabi with cilantro, green onions, kale and 1/2 tsp salt. Add the oil and lemon juice and toss again. Taste for salt, then serve.
