Ingredients
1/2napa cabbage, sliced very thinly
1large carrot, grated
1beet or 1 large watermelon radish, sliced into matchsticks
1/4of a red onion,
minced1/3 cup apple cider vinegar or rice vinegar
2tbspsugar
1tspground cumin(preferably toasted before being ground)
1/3vegetable oil
Salt and Pepper to taste
Instructions
Combine cabbage, carrots, beet or radish and onion in a large bowl.
In a small saucepan, combine vinegar, sugar, cumin and oil and bring to a boil.
Add dressing to cabbage and toss.
Season to taste with salt and pepper.
Creamy Coleslaw Dressing
In a small bowl, combine 1 minced garlic clove, 2 tbsp lime juice, 1 tsp ground cumin, 1/2 tsp hot red pepper sauce, 1 tbsp sugar and 1 cup mayonnaise (or half mayo/half plain yogurt).
