Mustard Greens with with Miso Dressing and Edamame

Ingredients

  • 1 bunch mustard greens , rinsed and roughly chopped
  • 1 large or 2 small red peppers , sliced very thinly
  • 1 cup shelled edamame
  • 1/4 cup sesame seeds , toasted

Creamy Miso Dressing

  • 3/4 cup brown rice vinegar
  • 5 tbsp white miso
  • 3 garlic cloves , minced
  • 3 tbsp honey
  • 2 - 4 tbsp olive oil

Instructions

  1. Remove edamame from plants. Wash, then boil or steam until tender, about 5 minutes. Remove beans from pods. Add the mustard greens, edamame, red pepper and sesame seeds to a medium sized bowl.

Whisk all of the dressing ingredients together until combined. Add to veggies and toss until coated. Serve!
