Creamy Baked Cabbage with Thyme

Ingredients

  • 1 head green cabbage
  • 1 tbsp butter
  • 1/2 cup sliced onion
  • 2 cloves garlic
  • 1 tbsp thyme , fresh or dried (1/2 as much if using dried)
  • salt and freshly ground black pepper
  • 1/4 cup white wine
  • 1/3 cup heavy cream

Instructions

  1. Bring a large pot of water to boil and add 1 tbsp salt. Cut cabbage in half and remove core. Sliver cabbage into 1/2 inch slices and drop into boiling water. Boil for 2-3 minutes or until it starts to soften. Immediately drain and rinse in cold water.
  2. Set aside.
  3. Preheat oven to 375 degrees. In a large oven proof skillet melt butter on medium low, Add onion and fry for 5 minutes.
  4. Meanwhile, crush garlic and add to onion along with thyme and lots of fresh ground pepper. Cook for another 5 minutes, stirring occasionally.
  5. Add cabbage and turn heat to medium.
  6. Stir to toss will with onion and cook until heated through and most of the excess liquid has been absorbed - about 5 minutes.
  7. Add white wine and simmer until reduced.
  8. Add cream and a big pinch of salt, stir and put the pan in the oven.
  9. Bake for 30 minutes. Taste for seasoning and serve hot!
