Simple, Delicious Arugula Salad

Arugula is a highly flavourful, crisp green with a slightly spicy, nutty flavour all its own. Like most things, combining arugula with good quality olive oil creates a magical flavour sensation. This simple salad is really versatile - you can add ingredients, put it under some roast veggies or meat or eat it as is and all are delightful.


  • Arugula, about 4 oz
  • Olive oil, about 2 tbsp
  • Salt, 1/8 tsp
  • Lemon juice, 1 tsp
  • Parmesan cheese, 2 tbsp, grated or shaved
  • A dash of red wine vinegar


  1. Throw arugula in a large enough bowl to easily toss. Drizzle on the olive oil, lemon juice and vinegar, sprinkle with salt and cheese and toss gently to coat the leaves very well.
