  • 2 cucumbers


  1. If water has accumulated with the cucumbers, drain it off.

  2. Pour the dressing over the sliced cucumbers and combine.


  1. In another bowl combine:

    1/4 cup heavy cream

    3 tbsp olive oil

    Juice of 1/2 lemon

    Fresh-ground pepper

  2. Stir well.

  3. Coarsely chop:

    3 mint springs, leaves only or 1/4 cup of basil leaves

    and toss with the cucumbers. Taste and adjust the salt as needed. Serve cool.
