Spring Beets on the Barbecue

The season’s first beets are a totally different thing from hardy, winter storage beets. They super sweet and tender and need barely anything on them or done to them to be delicious.
We often just steam them and slice them with dollops of goat cheese on top or roast them and toss them lightly with red wine vinegar. Off the barbecue, they are divine!
