Roasted Kohlrabi and Acorn Squash

Roasted Kohlrabi and Acorn Squash

Total Time 1 hour

Ingredients

  • 2 medium kohlrabi
  • 2 tablespoons extra-virgin olive oil
  • 2 teaspoons finely chopped fresh thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 acorn squash , seeded and cut into 1 inches cubes (don't
  • bother trying to peel it)

Instructions

  1. Put oven rack just below middle position and put baking pan on rack, then preheat oven to 450°F.
  2. Trim and peel kohlrabi, then cut into 3/4-inch pieces.
  3. Toss kohlrabi with squash, oil, thyme, salt, and pepper in a bowl.
  4. Transfer to preheated pan in oven and roast until vegetables are tender and lightly browned, about 45 minutes total.
  5. Transfer to a dish and serve
