Spring Roots with Cottage Cheese
- 4-5 white spring turnips , washed and thinly sliced
- 4-5 radishes , washed and thinly sliced
- 1/2 cup cottage cheese
- 2-3 tbsp extra virgin olive oil
- 2-3 tbsp lemon juice
- dash of balsamic vinegar
- salt and pepper to taste
Combine turnip, radish, cottage cheese and remaining ingredients in a bowl. Toss to combine thoroughly.
***Optional: Serve over a bed of arugula drizzled with olive oil, balsamic and a squeeze of lemon - so good! ***Substitution: try kohlrabi, chopped broccoli, fennel or other mustard greens in place of the turnip or radish.
