Carrots and Rutabaga with Lemon and Honey

Carrots and Rutabaga with Lemon and Honey

Total Time 40 minutes

Ingredients

  • 1 1/4 lb rutabaga , peeled, cut into matchstick size strips
  • 1 lb carrots , peeled and cut into matchstick size strips
  • 1/2 cup butter
  • 1/2 cup fresh lemon juice
  • 3 tbsp honey
  • 1 tsp grated lemon peel
  • 1/4 cup chopped fresh parsley

Instructions

  1. Cook rutabaga in large pot of boiling salted water 2 minutes.
  2. Add carrots and continue cooking until vegetables are tender, about 6 minutes. Drain
  3. Melt butter in a large pot over medium-high heat. Add lemon juice, honey and lemon peel. Bring to a boil.
  4. Add vegetables and cook until glazed, stirring occasionally, about 6 minutes. Season to taste with salt and pepper.
  5. Remove from heat. Mix in parsley.
