Roasted Acorn Squash with Lime and Cilantro

Roasted Acorn Squash with Lime and Cilantro

Ingredients

  • 1 acorn (or any other) squash
  • 3 tbsp olive or vegetable oil
  • 1 tsp brown sugar
  • Juice of half a lime
  • 1/2 cup chopped fresh cilantro
  • Salt and Pepper

Instructions

  1. Wash squash and cut horizontally into rings. Remove seeds and stem.
  2. Place squash, oil, sugar and salt and pepper in a large bowl. Toss to coat squash.
  3. Heat your oven to 375 degrees. Place the squash rings on a large baking sheet and place in the oven when preheated. Roast for approximately 45 minutes, turn once midway through until the squash is nicely browned on seach side and tender.
  4. Remove from baking sheet into a serving bowl. Add lime juice and cilantro and toss to coat squash. Taste and adjust salt and pepper. Serve hot!
