Vibrant Winter Slaw
- 1/2 napa cabbage , sliced very thinly
- 1 large carrot , grated
- 1 beet or 1 large watermelon radish , sliced into matchsticks
- 1/4 of a red onion ,
- minced1/3 cup apple cider vinegar or rice vinegar
- 2 tbsp sugar
- 1 tsp ground cumin (preferably toasted before being ground)
- 1/3 vegetable oil
- Salt and Pepper to taste
Combine cabbage, carrots, beet or radish and onion in a large bowl.
In a small saucepan, combine vinegar, sugar, cumin and oil and bring to a boil.
Add dressing to cabbage and toss.
Season to taste with salt and pepper.
Creamy Coleslaw Dressing
In a small bowl, combine 1 minced garlic clove, 2 tbsp lime juice, 1 tsp ground cumin, 1/2 tsp hot red pepper sauce, 1 tbsp sugar and 1 cup mayonnaise (or half mayo/half plain yogurt).
Taste and adjust seasonings if necessary.
