Sweet Chili Tomato Soup

Sweet Chili Tomato Soup

Ingredients

  • 2 tbsp extra virgin olive oil
  • 1 onion , chopped
  • 2 cloves garlic , finely chopped
  • 1 tbsp fresh ginger , finely chopped
  • 1 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • 2 lbs tomatoes , chopped
  • 2 cups chicken (or veggie) stock
  • 2 tbsp honey
  • 2 tbsp lemon juice
  • 2 tbsp sweet Thai chili sauce
  • 1/2 hot pepper

Instructions

  1. Heat oil in a large saucepan. Add onion, garlic, and ginger.
  2. Cook gently for 5 minutes. Add cumin and cinnamon. Cook for 1 minute.
  3. Add tomatoes, stock and bring to a boil.
  4. Reduce heat and simmer gently for 20 minutes.
  5. Purée soup and return to heat.
  6. Add honey, lemon juice, sweet chili sauce, hot pepper and salt. Cook for 5 minutes.
  7. Let sit for 10 minutes off heat.
  8. Serve - garnish with a dollop of yogurt and chopped cilantro or basil.
