Grilled Pizza with Caramelized Onions and Chedder

Grilled Pizza with Caramelized Onions and Chedder

Ingredients

  • Crust:
  • 1 cup warm water
  • 1 tbsp granulated sugar
  • 1 tbsp dry yeast
  • 3 cups all purpose flour (or half whole wheat)
  • 1 tsp salt
  • 2 tbsp extra-virgin olive oil
  • Topping:
  • 2 tbsp extra-virgin olive oil
  • 3 large onions , thinly sliced
  • 1 tbsp brown sugar
  • 1 tbsp balsamic vinegar
  • 12 oz . (smoked) Chedder cheese, grated
  • 2 tbsp chopped fresh basil

Instructions

  1. For crust: combine warm water and sugar in a large bowl. Sprinkle with yeast. Let stand for 10 minutes until yeast bubbles.
  2. Stir in about 11/2 cups flour, salt and 1 tbsp oil.
  3. Continue to add flour until dough is still very soft but does not stick to hands too badly. Knead dough for 5 to 8 minutes or until smooth. Form into a ball and place in a large bowl with 1 tbsp oil. Roll dough in oil - cover and let rise for 1 to 11/2 hours or until it doubles in volume.
  4. Punch down dough and divide into 8 pieces. Roll or stretch our thinly.
  5. Brush both sides with oil. Grill crusts for 1 minute per side.
  6. Place grilled crusts in a single layer on baking sheets.
  7. Meanwhile, heat oil in a large skillet over medium heat.
  8. Add onions and cook gently for a few minutes until lightly browned. Add sugar and balsamic and cook for about 20 minutes or until well browned. Cool.
  9. Top pizza with onions, cheese and basil.
  10. Bake in a preheated 400° oven for 10 to 12 minutes or until cheese bubbles.
