Beet Salad with Ginger Dressing

Beet Salad with Ginger Dressing

Ingredients

  • 2 pounds beets , scrubbed and halved
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon finely grated peeled fresh ginger
  • Salt and pepper
  • 1/2 cup shelled pistachios , toasted and chopped

Instructions

  1. Preheat oven to 425 degrees.
  2. Wrap beets in parchment-lined foil and place on a rimmed baking sheet.
  3. Roast until tender, 45 to 60 minutes.
  4. Let cool briefly, then remove skins. Cut into 3/4- inch wedges.
  5. In a large bowl, whisk together oil, vinegar, and ginger; season with salt and pepper.
  6. Toss beets in dressing and sprinkle with pistachios.
