Acorn Squash Rings with Honey-Soy Glaze

Acorn Squash Rings with Honey-Soy Glaze

Cook Time 40 minutes
Total Time 55 minutes

Ingredients

  • 1 acorn squash
  • 1.5 tbsp honey
  • 1 tbsp soy sauce
  • 1 tsp rice vinegar
  • 1 tsp minced peeled fresh ginger
  • 1 garlic clove , minced

Instructions

  1. Preheat oven to 450 degrees.
  2. Grease a baking sheet.
  3. Cut squash horizontally into rings, discarding stem and tip.
  4. Scoop out seeds and roast in a single layer, covered with foil for about 15 minutes. Whisk honey and next 4 ingredients in a bowl.
  5. Remove foil from squash, brush on half of honey mixture.
  6. Bake uncovered for 10 minutes. Brush remaining honey mixture on squash and continue to bake until squash is tender and glazed, about 10 more minutes.
