Edamame, Tomato and Basil Salad
- 1 cup shelled edamame
- 1/2 cup tomatoes , chopped
- 2 tablespoons Parmesan cheese , shredded
- 1/3 cup fresh basil , chopped
- 1 tablespoon red wine vinegar
- 1 tablespoon olive oil
- Salt and pepper to taste
Combine all ingredient in a bowl. Serve immediately or chill for a couple hours before serving.
Makes about 1 1/2 cups (4 heaping-1/3 cup servings)
